This wine is made from Corvina and Corvinone, Pier Paolo’s favourite grapes, which are carefully handpicked from the end of Septembre to early October from vines in the Valpolicella Classica area in the towns of Marano di Valpolicella, San Pietro in Cariano and Negrar. The vineyards are at a height of 150 to 350 metres above sea level. Every year we produce from 7000 bottles of Corvina Veronese which are sold using Burgundy bottles of 750 ml, sealed with a natural cork.
In order to obtain a pleasant roundness wine, 20% of grapes are left to dry for two weeks then pressed with fresh grapes (picked in October) in a de-stemming winepress and fermented for 7 days in steel containers with automatically controlled temperature and indigenous yeasts. Partly of wine is aged in oak barrels and partly in stainless steel tanks for 12 months.
Corvina Veronese is a intense, ruby red colour with a bouquet of berries and sultana grapes and a fresh and savory flavour, with mild tannins and a slight spiciness. The suggested serving temperature is 18° C. The wine goes well with red meat, fresh or mature cheese; pair it with a traditional risotto with “tastasal”.
